Outstanding

The meeting was... So awesome!
We got a buffet style meal... It was amazing!
The culinary students at the college prepared it all
and did all the catering for it. Such a treat!
I went up for seconds because it was just... So great!
Everything was so fancy and high dining.

There were Chefs there who are big in the industry.
I talked to one Chef who won medals.
There was a Chef who cooks for parliament,
and one who cooks for The Governor General.

One Chef spoke about an opportunity on a cruise line.
It sounds tempting, but there are some drawbacks.
It's 10 months... 7 days a week, 12 hour days.
But it's GOOD money... $4k/month.
That's $40k in a year.
That's... Twice as much as this computer networking stuff pays,
but the computer networking isn't 12 hour days, isn't 7 days a week.
It's good money, but 12 hours is long. Especially every day... Crazy.
But at the end, that's a good chunk of money.
That's what makes it tempting.

Anyway, we're going to have a placement of 40 hours after we graduate in June.
We'll get catering experience, too.
I haven't done catering before. Barely even been in an actual kitchen
besides my own of course. Not that I'm always in it,
but I've made some things before.
I once made stuffed rainbow trout. It was my first time,
and I didn't know I had to take the bones out.
I've made lasagna and manicotti,
I've made ravioli from scratch, dough and all.
I've made bread from dough before.
When I make something with dough, I make the dough the night before.
That way, the dough is already made and one less thing to do.

I'd like to get better at cooking. In general.
Been so hopeless in the kitchen. For so long.
It's about time that I learned how it's done.
I'm getting better at making the salads though.
But lately it's just been little tasks like opening cans and stuff.
Like today, I opened MANY cans of tomatos. Even some lentils.
The lentils were for the vegetarian sauce
because they are making lasagna and there's a vegetarian option.
Usually it is tofu, but it's something.

The meal tonight... I can't even begin to describe it.
I'm so thankful that I got to go to that. I want to go again.
There were some speakers for the meeting.
Like one guy owns a dairy distillery.
Basically, they make vodka out of milk. 100% Canadian milk.
And they package it in old style milk bottles.
It's called Vodcow. Or something like this.
He explained the process. They use special yeast that breaks down the sugars
in the milk and even lactose intolerant people can drink it.
It's 40% alcohol. Just like vodka.
I can't try it or anything, I don't drink anymore,
but it sounds neat. Never knew vodka can be made from milk.

I think we get a year's membership to the association, so we get to go to meetings.
I don't know about the next one, yet. But I want to go again.

They did mention the fundraiser...
They were saying that they want to sell more tickets.
Tickets are expensive, but it'll be worth it from what I've heard.
All catered, and everything. It's going to be fancy, too.
I might have to wear a dress to this event.

Anyway, I have to study some more.
I have to read and make videos for chapter 3.
I'm scared because I have barely read any of it, yet
and we have a test on it on Wednesday. So close.
I think I might fail, so hopefully, I don't.
I'll have to just do my best. I was away for a while.
I've been studying when I can, but been so tired.
Barely sleeping... So much on my mind.

Anyway, I'm going to just try and do some.
Even if I just make the videos or start doing that tonight...
So I can go over it again and again tomorrow.
I'll put them on my phone, too.
So I can listen to them on the bus.
It's just so much in so little time,
but I'll try. It's all I can do at this point.
